How to back up ipod touch apps?

Hi i jailbroke my ipod touch and downloaded tons of games and apps. but now i want to take it to the apple store but obviously they wont do anything if the device is jailbroken. so my goal is to restore my ipod to original factory settings, and back up

You can do this right in itunes or you can connect to your pc and right click the ipod in the computer menu. You can click the backup button and this will store all the information on your hardrive.
